This chocolate orange tofu mousse is a creamy, protein based dessert or snack that’s quick and easy to make. Silken tofu blended with Lindt chocolate orange, cocoa, honey and a hint of orange essence creates a smooth, indulgent treat that’s lighter than traditional mousse.

| 300 g | Clearspring silken tofu | |
| 100 g | Lindt orange chocolate | |
| 2 tsp | Orange essence | |
| 2 tbsp | Honey | |
| 2 tsp | Cocoa powder |
Break up the chocolate and place in a glass bowl. Fill 1/4 of a pan with water and boil. Once the water is hot turn down to simmering and place bowl of chocolate on top so you can melt it.
Drain the silken tofu thoroughly and place in a blender or food processor.
Add the melted chocolate orange, cocoa powder, orange essence, and honey.
Blend on high speed until smooth and creamy, scraping down the sides as needed.
Taste and adjust sweetness or orange flavour as desired.
Spoon the mousse into 6 small glasses or pots and chill in the fridge for at overnight before serving for a firmer texture.
